You will need 4 large sweet corn.
1 pot of rolling boiling water seasoned with my not so secret "corn boil".
1 tsp each, garlic, onion and cumin powders. 1 Bay leaf. 1 small peel and diced onion. 1/2 tsp cayenne pepper ( optional). 1 tbsp of kosher or local sea salt. 3 tbsp of sugar and 1 tsp of whole clove and allspice mixed.
When ready to serve add the corn and blanch for 5 minutes and turn the heat off. Allow it to sit in the broth the absorb the flavors. Drain and plate.
The sauce: 1 cup Hellmans mayonnaise, salt and pepper to taste, 1 tbsp of Sriracha juice from half of lime, a splash of fish sauce and mix well together.
To plate drain the corn and plate. Drench in the sauce, add grated parmesan cheese. Add sprigs of fresh cilantro and flooring herbs from Green Leaf Farms.
